Leftover Corned Beef?

For scheduling reasons we had corned beef and cabbage the day before Saint Patrick’s Day. However I didn’t feel one bit slighted on the day itself as we took the leftover corned beef, freshly baked potato bread, pepper jack cheese and added the special sandwich sauce developed by the Man of the House. The sandwiches were heavenly!!

I don’t know about the weather where you are, but we’re having a heat wave here! The temperatures are going to be in the 90s this week. Yikes!

For dinner this week we’re planning lots of sandwiches. I’ll run the bread machine in the morning when it’s cooler. Then for dinner we’ll slice up the bread and have sandwiches and a salad for dinner.

Cherry Delight – OK, this one is more a dessert salad. It’s very yummy and cooling. Heck, with temps this high it’s almost medicinal.
